Almond and Coffee Crumble Cake Recipe


Hey guys today I’m going to show you how to make a coffee and almond cake with some cinnamon crumble and you might even like this cake even if you don’t like coffee because a couple of people I know who really swear off coffee really like the taste of this cake. So if you like the recipe, let me know in the comments section down below. So to start you’re first going to just line up your baking pan and I’m using a ten inch baking pan. I’m just gonna clamp on some parchment paper on the bottom and then I just buttered the sides with some softened butter. So after you do that, set your pan aside and to a large bowl you’re going to add your softened butter and some white sugar. To that, you’re also going to add a little bit of salt and some vanilla extract. Give that a mix until everything’s nice and smooth and then you’re going to add in your eggs. Make sure that your eggs are also at room temperature. So everything combines really well. My batter always tends to be a little bit curdled, but after it’s been baked it tastes just fine. So once that’s done, you’re going to sift in half of your flour. This is all-purpose flour, and I’m also going to add some baking powder. So sift that inside and then just gently whisk that to combine those. Once you do that you’re going to add in your brewed coffee and make sure your coffee is at room temperature. Slightly warm is okay, too. And I’m using an English toffee roasted coffee so it It has a nice flavor. And yes that rhymed. Then just mix that together and then you’re going to add in the rest of your flour. Sift that in and again whisk that just until all the flour is combined. Once you do that, you’re just going to fold in your chopped almonds and you can also use hazelnuts or walnuts those work really well. Just gently fold those in and then pour that into your cake pan. Smooth that out with your spatula, it doesn’t need to be perfect and then leave it in the fridge while you make your crumble. I just made my crumble in the same bowl that I made my cake batter and you don’t really need another clean bowl. To that you’re going to add some butter and you’re also going to add some brown sugar. I like using a more coarse brown sugar because it just makes the texture a little bit more crunchy and nice. And to that I’m adding a little bit of salt. This is really nice with the sweetness and I’m adding a little bit of cinnamon. You can add more cinnamon if you like. But I like adding just a little bit for that extra warmth. And just mix that with your spatula until that’s smooth then you’re going to add in your flour and mix that together. I kind of do a cutting motion with my spatula and this just for me, it’s the easiest way to combine the flour into that mixture. And you’ll end up with some crumbles it’ll end up with larger and smaller pieces. Then you’re just going to sprinkle that all over your cake and try to get it on and evenly as possible. So everyone gets a fair amount of crumble. So now all that’s left to do is bake this and have your oven preheated to 350 degrees Fahrenheit Which is 180º Celsius and place this onto a baking tray just in case something leaks from the bottom. And then you’re gonna put it in your oven And it’s gonna bake for about 45 to 50 minutes or until a skewer comes out clean. Mine took about 50 minutes. Then once that comes out of the oven you can gently release the sides with a spatula and remove the ring.
